Mediterranean Salad with Bloom Fresh Wild Arugula, Tomatoes and Feta

2 cups loosely packed Bloom Fresh wild arugula

1 tablespoon chopped Bloom Fresh oregano

6 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon honey
2 cucumbers, seeded, medium diced
4 ripe tomatoes, cored, medium diced
1 small red onion, peeled and thinly sliced
5 ounces feta cheese, cut into cubes
1 cup pitted Kalamata olives
Salt and black pepper to taste


  1. In a large bowl, combine vinegar, salt and pepper. Slowly drizzle in olive oil while whisking to pull the dressing together. Whisk in honey, then add chopped oregano.
  2. Toss in arugula, cucumbers, tomatoes, onions, feta cheese and olives and toss gently to combine. Season to taste with salt and fresh cracked black pepper. Serve immediately.
