Mediterranean Salad with Bloom Fresh Wild Arugula, Tomatoes and Feta

2 cups loosely packed Bloom Fresh wild arugula
1 tablespoon chopped Bloom Fresh oregano
6 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon honey
2 cucumbers, seeded, medium diced
4 ripe tomatoes, cored, medium diced
1 small red onion, peeled and thinly sliced
5 ounces feta cheese, cut into cubes
1 cup pitted Kalamata olives
Salt and black pepper to taste
- In a large bowl, combine vinegar, salt and pepper. Slowly drizzle in olive oil while whisking to pull the dressing together. Whisk in honey, then add chopped oregano.
- Toss in arugula, cucumbers, tomatoes, onions, feta cheese and olives and toss gently to combine. Season to taste with salt and fresh cracked black pepper. Serve immediately.
