No Prob Pomegranate Chicken Tacos

1 cup of Bloom Fresh Pomegranate Arils

2 tablespoons fresh chopped Bloom Fresh Cilantro

2 lbs boneless skinless chicken breasts
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon brown sugar
salt and pepper
8 oz of light beer
1/2 cup of pomegranate juice
8 taco shells soft or hard ( I prefer soft)
1 green apple chopped
1 jalapeño, seeded (if desired) + chopped


  1. In a large bowl mix olive oil, chili powder, brown sugar, beer and pomegranate juice
  2. Salt and pepper chicken
  3. Pour mixture in a large deep baking dish and add chicken
  4. Cover with foil and cover on 350 for 40-45 minutes
  5. Remove cover and bake for 5-7 more minutes
  6. When chicken is cooked, thinly slice and add to taco shell
  7. Toss apple, Pomegranate seeds, Jalapeños, cilantro with a drizzle of olive oil and top tacos with mixture and serve
